You also have to be sure the enemy will either bounce off your shield or won't be attacking immediately again. Other than that, it seems pretty great. I only started using it recently too and felt pretty similarly to you.
Guard countering takes too much pre planning to actually be useful during bosses sadly. It's too hard to remember to do it at the very end of a boss combo.Yeah I gave up on margit.
