South Strip view rooms would be in the 2 wings where rooms on one side of the hallway face south. Fountain View rooms would be in the wings that face the strip, but they would be in positions on the floor where you'd get the most unobstructed view of the fountains. Pool view are also in the wings that face the strip, on lower floors.

If you like buffets, Paris has better variety than Mirage. Gustav's Bar is friendlier than the Mirage casino bars. And, IMO, CET properties are just more hospitable overall.
